Coconut Milk Pork Skillet

Ingredients:

  • 5 lbs pork tenderloin, sliced
  • 1 can 13
  • 5 oz coconut milk
  • 1 red bell pepper, sliced
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 tablespoon red curry paste
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon coconut oil
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, sliced
  • Salt and pepper to taste

Instructions:

Heat coconut oil in a skillet over medium-high heat

Add sliced pork tenderloin and cook until browned on all sides

Remove from the skillet and set aside

In the same skillet, add sliced bell pepper, onion, and minced garlic

Saut until vegetables are tender

In a small bowl, mix together coconut milk, red curry paste, soy sauce, fish sauce, and brown sugar

Pour the coconut milk mixture into the skillet with the vegetables

Return the cooked pork to the skillet, stirring to coat with the sauce

Simmer for 5-7 minutes until the pork is cooked through

Season with salt and pepper to taste

Garnish with chopped cilantro and serve over rice

Squeeze fresh lime juice over the dish before serving
