Ingredients:
- 1 cup almond flour
- 1 3/4 cups powdered sugar
- 3 large egg whites
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- Food coloring optional
- 1/2 cup unsalted butter room temperature
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
- Jam or ganache for filling your choice
Instructions:
Prepare a baking sheet with heart-shaped macaron templates or silicone heart-shaped molds
Sift together almond flour and powdered sugar in a mixing bowl
In a separate bowl, beat egg whites until foamy, then gradually add granulated sugar and beat until stiff peaks form
Add vanilla extract and food coloring if desired to the egg white mixture
Gently fold the almond flour mixture into the egg white mixture until fully combined and smooth
Be careful not to overmix
Transfer the batter into a piping bag with a round tip
Pipe heart shapes onto the prepared baking sheet or molds
Tap the baking sheet to remove any air bubbles and let the macarons sit for about 20-30 minutes to form a skin
Preheat your oven to 300F 150C
Bake the macarons for 15-18 minutes or until they lift easily off the parchment paper or molds
Allow the macarons to cool completely on a wire rack
In a mixing bowl, cream together the butter, powdered sugar, and vanilla extract to make the buttercream filling
Once the macarons are cooled, pair them up by size and spread a layer of jam or ganache on one half of each pair
Sandwich the halves together and gently twist to adhere the filling
Let the macarons rest in the refrigerator for 24 hours to develop flavor
