Gluten-Free Vegan Chai Ice Cream Sandwiches

Try these tasty gluten-free vegan ice cream sandwiches. The chai spices will warm you up, and the maple syrup will make them sweet. Great for satisfying your sweet tooth without using gluten or animal products.

Ingredients:

  • 2 cups gluten-free flour blend
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground cardamom
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup coconut oil, melted
  • 1/2 cup maple syrup
  • 1 tsp vanilla extract
  • 1 pint vegan chai ice cream

Instructions:

Warm the oven up to 175F 350C

Ground cinnamon, ground cloves, ground cardamom, ground nutmeg, and gluten-free flour should all be mixed together in a bowl

Melt the coconut oil and mix it with the maple syrup and vanilla extract

Mix until you get a dough

Between two pieces of parchment paper, roll out the dough until it is about 1/4 inch thick

Cut cookies with a cookie cutter and place them on a baking sheet that has been lined with parchment paper

When the edges are golden brown, its done baking

Allow the cookies to cool all the way down

Take one cookie and put a scoop of vegan chai ice cream on it

Then put another cookie in between them

Do it again with the rest of the ice cream and cookies

Before you serve, put the ice cream sandwiches together in the freezer for at least an hour
