Ingredients:
- 1 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 cup granulated sugar
- 1/4 cup dark chocolate chips
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup buttermilk
- 1/4 cup vegetable oil
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1/2 cup fresh raspberries
- For the glaze:
- 1 cup powdered sugar
- 2 tablespoons dark cocoa powder
- 2-3 tablespoons milk
- 1/2 teaspoon vanilla extract
- Fresh raspberries for garnish
Instructions:
Grease a doughnut pan and preheat the oven to 350 degrees Fahrenheit 175 degrees Celsius
Combine the flour, baking soda, granulated sugar, cocoa powder, dark chocolate chips, and salt in a mixing bowl
Beat the egg, vegetable oil, buttermilk, and vanilla extract in a separate bowl
Mixing until just combined, pour the wet ingredients into the dry ingredients
Add the fresh raspberries and fold gently
Transfer the batter into a ziplock bag or piping bag by snipping off the corner
Fill each cavity of the doughnut pan about two thirds full with batter as you pipe it in
When a toothpick is inserted into a doughnut, it should come out clean after baking for 10 to 12 minutes in a preheated oven
Make the glaze while the doughnuts are baking
Mix the milk, vanilla extract, powdered sugar, and dark cocoa powder in a bowl until well combined and glossy
When done, take the doughnuts out of the oven and allow them to cool in the pan for a few minutes before moving them to a wire rack to finish cooling
Every cooled doughnut should be dipped into the glaze, letting any extra drip off
Reposition the doughnuts with glaze on the wire rack
As a garnish, place a fresh raspberry on top of each doughnut
After a few minutes for the glaze to solidify, your Glazed Dark Chocolate Raspberry Doughnuts are ready to eat
