This recipe for Keto Chinese Kong Pao Chicken tastes just like the traditional dish, but it doesnt have any carbs. This meal is good for people on the ketogenic diet because it has tender chicken, crunchy peanuts, and a savory-sweet sauce.
Ingredients:
- 1 lb chicken breast, diced
- 2 tbsp coconut aminos
- 2 tbsp rice vinegar
- 2 tbsp sesame oil
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 1/4 cup peanuts
- 1/2 cup green onions, chopped
- 2 tbsp erythritol or preferred keto sweetener
- 1 tbsp chili flakes
- 1 tbsp arrowroot powder or xanthan gum for thickening
- Salt and pepper to taste
Instructions:
In a bowl, mix coconut aminos, rice vinegar, sesame oil, minced garlic, minced ginger, erythritol, and chili flakes
Set aside
Heat a skillet over medium-high heat
Add diced chicken breast and cook until browned and cooked through
Add the sauce mixture to the skillet and stir to coat the chicken
Sprinkle arrowroot powder or xanthan gum over the chicken and sauce mixture, stirring continuously to thicken the sauce
Once the sauce has thickened, add peanuts and chopped green onions
Cook for an additional 2-3 minutes
