Creamy Avocado Pasta with Arugula and Tomatoes

Indulge in the creamy goodness of this vegan avocado pasta thats bursting with flavors from fresh arugula and tomatoes. This dish is not only delicious but also packed with nutrients, making it a healthy choice for any mealtime.

Ingredients:

  • 2 ripe avocados, peeled and pitted
  • 1/2 cup fresh arugula leaves
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil leaves
  • 2 tablespoons lemon juice
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 8 ounces whole wheat pasta

Instructions:

Cook the pasta according to package instructions until al dente

Drain and set aside

In a blender or food processor, combine the avocados, arugula, cherry tomatoes, garlic, basil, lemon juice, and olive oil

Blend until smooth and creamy

Season the avocado sauce with salt and pepper to taste
