Ingredients:
- 1 cup creamy peanut butter
- 1/2 cup honey
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup honey roasted peanuts, chopped
- Additional granulated sugar for rolling
Instructions:
Preheat the oven to 350F 175C
Line baking sheets with parchment paper
In a large bowl, cream together the peanut butter, honey, granulated sugar, brown sugar, and butter until smooth and creamy
Beat in the egg until well combined
In a separate bowl, whisk together the flour, baking soda, baking powder, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until just combined
Fold in the chopped honey roasted peanuts
Shape the dough into 1-inch balls
Roll each ball in additional granulated sugar
Place the coated dough balls on the prepared baking sheets, leaving some space between them
Using a fork, gently flatten each dough ball, creating a crisscross pattern on top
Bake in the preheated oven for about 10-12 minutes, or until the cookies are golden brown around the edges
Remove from the oven and let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely
