Cilantro Lime Quinoa is a tasty side dish that goes well with a lot of different main dishes. When you mix sour lime and fragrant cilantro, your food gets a little citrusy boost.
Ingredients:
- 1 cup quinoa
- 2 cups water
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
Rinse the quinoa thoroughly under cold water
In a medium saucepan, combine quinoa and water
Bring to a boil
Reduce heat to low, cover, and simmer for 15-20 minutes, or until quinoa is tender and water is absorbed
Remove from heat and let it sit for 5 minutes, then fluff with a fork
In a separate bowl, combine chopped cilantro, lime juice, lime zest, salt, and black pepper
Gently fold the cilantro-lime mixture into the cooked quinoa
Serve warm as a side dish or as a base for your favorite protein
