Ingredients:
- 1 box white cake mix
- 1 cup fresh strawberries, pureed
- 1/2 cup vegetable oil
- 3 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- Red food coloring
- Blue food coloring
- 1 cup rainbow sprinkles
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1/4 cup milk
- 1 teaspoon vanilla extract
Instructions:
Preheat your oven to 350F 175C and line a cupcake pan with patriotic cupcake liners
In a large mixing bowl, combine the white cake mix, pureed strawberries, vegetable oil, eggs, 1/2 cup milk, and 1 teaspoon of vanilla extract
Mix until well combined
Divide the batter into three equal parts in separate bowls
Leave one bowl as is, dye one bowl red with a few drops of red food coloring, and dye the last bowl blue with a few drops of blue food coloring
Spoon a bit of each colored batter into each cupcake liner, creating a red, white, and blue swirl effect
Bake the cupcakes in the preheated oven for about 18-20 minutes or until a toothpick inserted into the center comes out clean
Allow them to cool completely on a wire rack
For the funfetti frosting, beat the softened butter in a mixing bowl until creamy
Gradually add the powdered sugar, 1/4 cup milk, and 1 teaspoon of vanilla extract
Beat until the frosting is smooth and fluffy
Fold in the rainbow sprinkles to create a funfetti effect in the frosting
Once the cupcakes are cool, pipe or spread the funfetti frosting onto each cupcake using a piping bag or a spatula
Decorate the cupcakes with additional rainbow sprinkles for an extra patriotic touch
