Gluten-Free Chocolate Chip Oatmeal Cookies

These chocolate chip oatmeal cookies are soft, chewy, and fully loaded with flavor. They are made without gluten. These cookies are great for people who are sensitive to gluten because they are made with healthy ingredients like almond flour, coconut oil, and maple syrup.

Ingredients:

  • 2 cups gluten-free rolled oats
  • 1 cup almond flour
  • 1/2 cup coconut sugar
  • 1/4 cup maple syrup
  • 1/3 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dairy-free chocolate chips

Instructions:

Preheat oven to 350F 175C

Line a baking sheet with parchment paper

In a large bowl, mix together oats, almond flour, coconut sugar, baking soda, and salt

In a separate bowl, whisk together melted coconut oil, maple syrup, and vanilla extract

Pour wet ingredients into the dry ingredients and mix until well combined

Fold in chocolate chips

Scoop dough using a cookie scoop and place onto the prepared baking sheet

Gently flatten each dough ball with your palm

Bake for 10-12 minutes or until edges are golden brown

Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely
