Ingredients:
- 2 cups sweet corn kernels
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tsp curry powder
- 1/2 tsp cumin powder
- 1/2 tsp coriander powder
- 1/4 tsp turmeric powder
- 1/4 tsp red chili powder adjust to taste
- Salt and pepper to taste
- 1/2 cup tomato sauce
- 1/4 cup water
- 8 small taco shells
- 1/2 cup shredded cheese optional
- Fresh cilantro leaves for garnish
- Lime wedges for serving
Instructions:
Set a pan on medium heat and add oil
Put in the ginger, garlic, onions, and bell peppers
Cook the onions until they become clear
Salt, pepper, turmeric powder, red chili powder, cumin powder, and coriander powder should all be mixed in
Do this for two minutes
After you add the sweet corn kernels, cook for another 5 minutes while stirring every now and then
Add the water and tomato sauce
Let it cook on low heat for 10 to 15 minutes, or until it gets thicker
Follow the directions on the package to warm the taco shells up in the oven
Pour some of the sweet corn curry into each taco shell
If you want, you can add shredded cheese on top and fresh cilantro leaves on top
With lime wedges on the side, serve hot
